Description

These maple glazed roasted nuts are the perfect combination of sweet, crunchy, and satisfying. Coated in pure maple syrup and lightly spiced with cinnamon, they make an irresistible snack, a thoughtful homemade gift, or a delicious addition to salads and cheese boards. Simple to make and endlessly customizable, they’re a cozy treat for any season.

Ingredients

Scale

Ingredients

  • 2 cups mixed nuts (almonds, pecans, walnuts, cashews, or hazelnuts)

  • ¼ cup pure maple syrup

  • 1 tablespoon olive oil or melted coconut oil

  • 1 teaspoon pure vanilla extract

  • ½ teaspoon ground cinnamon

  • ¼ teaspoon sea salt, plus extra for sprinkling

  • Optional: pinch of cayenne pepper or smoked paprika

Instructions

  • Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.

  • In a large bowl, combine the nuts, maple syrup, olive oil, and vanilla extract. Stir until evenly coated.

  • Add cinnamon, sea salt, and optional cayenne pepper. Toss again to coat thoroughly.

  • Spread the nuts evenly on the prepared baking sheet in a single layer.

  • Roast for 20–25 minutes, stirring halfway through, until golden brown and fragrant. Watch closely to prevent burning.

  • Remove from the oven and sprinkle lightly with extra sea salt while still warm.

  • Let the nuts cool completely on the baking sheet—they’ll crisp up as they cool.

  • Store in an airtight container at room temperature for up to two weeks.

Notes

  • Use pure maple syrup for the best flavor and caramelization.

  • Mix up your favorite nuts for varied textures.

  • Add a touch of cayenne for a sweet-and-spicy twist.

  • Cool completely before storing to maintain crunchiness.

  • Double the batch for gifting or holiday snacking.
