Ingredients
Muffins
-
1¾ cups all-purpose flour
-
1 teaspoon baking soda
-
½ teaspoon baking powder
-
½ teaspoon salt
-
1 teaspoon ground cinnamon
-
½ teaspoon ground nutmeg
-
¼ teaspoon ground cloves
-
¼ teaspoon ground ginger
-
1 cup pumpkin puree (fresh or canned)
-
½ cup vegetable oil or melted coconut oil
-
½ cup granulated sugar
-
½ cup brown sugar, packed
-
2 large eggs
-
1 teaspoon vanilla extract
-
¼ cup milk (any variety)
Maple Glaze
-
½ cup powdered sugar
-
2 tablespoons pure maple syrup
-
1–2 teaspoons milk (adjust for desired consistency)
Instructions
-
Preheat the oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners or lightly grease it with butter or non-stick spray.
-
In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, cloves, and ginger.
-
In a large bowl, combine pumpkin puree, vegetable oil, granulated sugar, brown sugar, eggs, and vanilla extract. Whisk until smooth, then gradually add milk until incorporated.
-
Gently fold dry ingredients into the wet ingredients until just combined, being careful not to overmix.
-
Spoon the batter into muffin cups, filling each about ¾ full. Optionally, sprinkle a pinch of cinnamon sugar on top.
-
Bake for 20–25 minutes, or until a toothpick inserted in the center comes out clean. Rotate the pan halfway through for even baking.
-
While muffins cool, prepare the glaze by whisking powdered sugar, maple syrup, and milk in a small bowl. Adjust consistency as needed.
-
Drizzle the glaze over slightly cooled muffins and let it set for a few minutes before serving.
-
Serve warm with coffee, tea, or hot chocolate. Optionally, top with chopped pecans or a dusting of cinnamon.
