Ingredients

1 cup (120g) all-purpose flour

1 teaspoon baking powder

½ teaspoon dried oregano

½ teaspoon dried basil

¼ teaspoon garlic powder

¼ teaspoon salt

1 large egg
-
¾ cup (180ml) milk

1 cup (120g) shredded mozzarella cheese

½ cup (120g) diced cooked chicken or diced vegetables

½ cup (120g) pizza sauce

Olive oil spray
Instructions

Preheat oven to 375°F (190°C) and lightly grease a 12-cup muffin tin.

Whisk flour, baking powder, oregano, basil, garlic powder, and salt together.

Stir in egg and milk until smooth.

Fold in cheese and chicken or vegetables.

Divide batter into muffin cups, filling ¾ full.

Add 1 teaspoon pizza sauce on top of each muffin and swirl slightly.

Bake 12–15 minutes or until golden and a toothpick comes out clean.

Cool 5 minutes before serving.
Notes
