Description

A quick and flavorful handheld snack that captures the essence of classic pizza in an easy, muffin-style form.


Ingredients

Scale
  • 1 cup (120g) all-purpose flour

  • 1 teaspoon baking powder

  • ½ teaspoon dried oregano

  • ½ teaspoon dried basil

  • ¼ teaspoon garlic powder

  • ¼ teaspoon salt

  • 1 large egg

  • ¾ cup (180ml) milk

  • 1 cup (120g) shredded mozzarella cheese

  • ½ cup (120g) diced cooked chicken or diced vegetables

  • ½ cup (120g) pizza sauce

  • Olive oil spray


Instructions

  • Preheat oven to 375°F (190°C) and lightly grease a 12-cup muffin tin.

  • Whisk flour, baking powder, oregano, basil, garlic powder, and salt together.

  • Stir in egg and milk until smooth.

  • Fold in cheese and chicken or vegetables.

  • Divide batter into muffin cups, filling ¾ full.

  • Add 1 teaspoon pizza sauce on top of each muffin and swirl slightly.

  • Bake 12–15 minutes or until golden and a toothpick comes out clean.

  • Cool 5 minutes before serving.

Notes

These muffins freeze well and can be reheated in the microwave or oven. Customize them with your favorite vegetables or lean proteins for endless variations.
