Ingredients
1 large bunch kale (about 300 g), stems removed and chopped
1/2 cup (50 g) grated Parmesan cheese
1 cup (60 g) croutons, crushed
1/4 cup (60 ml) fresh lemon juice
1/3 cup (80 ml) olive oil
2 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon honey (5 ml)
Instructions
Wash and dry the kale, remove stems, and chop into bite-sized pieces.
In a bowl, whisk together lemon juice, olive oil, garlic, salt, pepper, and honey.
Pour dressing over kale and massage for 2–3 minutes until tender.
Add grated Parmesan cheese and toss to combine.
Stir in crouton crumbles just before serving.
Serve immediately and enjoy.
