A tender, sweet-savory chicken dish made effortlessly in the slow cooker with fig jam sauce and creamy goat cheese.
Ingredients

2 pounds (900 g) boneless, skinless chicken breasts or thighs

1 cup (320 g) fig jam

3 cloves garlic, minced

1 medium onion, thinly sliced

1 tablespoon olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon dried thyme

1/2 teaspoon dried rosemary

1/4 cup (60 ml) low-sodium chicken broth

4 ounces (115 g) goat cheese, crumbled

1 tablespoon balsamic-style vinegar (non-alcoholic)
Instructions

Lightly grease the slow cooker with olive oil.

Place sliced onion at the bottom of the slow cooker.

Season chicken with salt, pepper, thyme, and rosemary.

Arrange chicken over the onions.

Mix fig jam, garlic, broth, and vinegar in a bowl.

Pour mixture over chicken.

Cook on low for 5–6 hours or high for 3–4 hours.

Add goat cheese during the last 10 minutes of cooking.

Notes
For thicker sauce, reduce the cooking liquid on the stovetop or add a cornstarch slurry near the end. This dish pairs well with rice, potatoes, or roasted vegetables.
