Description

A tender, sweet-savory chicken dish made effortlessly in the slow cooker with fig jam sauce and creamy goat cheese.


Ingredients

  • 2 pounds (900 g) boneless, skinless chicken breasts or thighs

  • 1 cup (320 g) fig jam

  • 3 cloves garlic, minced

  • 1 medium onion, thinly sliced

  • 1 tablespoon olive oil

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1 teaspoon dried thyme

  • 1/2 teaspoon dried rosemary

  • 1/4 cup (60 ml) low-sodium chicken broth

  • 4 ounces (115 g) goat cheese, crumbled

  • 1 tablespoon balsamic-style vinegar (non-alcoholic)


Instructions

  • Lightly grease the slow cooker with olive oil.

  • Place sliced onion at the bottom of the slow cooker.

  • Season chicken with salt, pepper, thyme, and rosemary.

  • Arrange chicken over the onions.

  • Mix fig jam, garlic, broth, and vinegar in a bowl.

  • Pour mixture over chicken.

  • Cook on low for 5–6 hours or high for 3–4 hours.

  • Add goat cheese during the last 10 minutes of cooking.

  • Serve warm.

Notes

For thicker sauce, reduce the cooking liquid on the stovetop or add a cornstarch slurry near the end. This dish pairs well with rice, potatoes, or roasted vegetables.
