Ingredients

3 cups fresh pineapple, diced (about 450 g)

2 cups cucumber, sliced or chopped (about 300 g)

2 tablespoons fresh lime juice (30 ml)

2 tablespoons fresh mint, finely chopped (about 5 g)

¼ teaspoon fine salt (1.5 g)

Optional: 2 tablespoons thinly sliced red onion (20 g)
Instructions

Peel, core, and dice the fresh pineapple into evenly sized cubes.

Wash and slice the cucumber into half-moons or bite-size pieces.

Add the pineapple and cucumber to a large mixing bowl.

Sprinkle in the chopped mint and optional red onion.

Pour the fresh lime juice over the salad and add the salt.

Gently toss until all ingredients are evenly coated.
