Description

A bright and flavorful grilled chicken recipe infused with lemon, garlic, and Mediterranean herbs. Perfect for outdoor grilling, family dinners, or healthy meal prep.


Ingredients

2 pounds (900 g) boneless skinless chicken thighs or chicken breasts
3 tablespoons extra virgin olive oil
3 tablespoons fresh lemon juice
4 cloves garlic, minced
1 tablespoon fresh oregano, chopped (or 1 teaspoon dried oregano)
1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
2 tablespoons fresh parsley, chopped
1 teaspoon sea salt
½ teaspoon black pepper
1 teaspoon paprika
½ teaspoon ground cumin
1 teaspoon lemon zest
1 tablespoon honey
Optional garnish: chopped parsley and lemon wedges


Instructions

In a bowl, whisk together olive oil, lemon juice, minced garlic, oregano, thyme, parsley, salt, pepper, paprika, cumin, lemon zest, and honey.

Place the chicken in a large bowl or resealable bag and pour the marinade over it. Mix well to coat the chicken evenly.

Cover and refrigerate for at least 30 minutes, preferably 2–4 hours for stronger flavor.

Preheat a grill to medium heat (375–400°F / 190–200°C) and lightly oil the grates.

Place the marinated chicken on the grill and cook for 6–7 minutes per side for thighs or 5–6 minutes per side for chicken breasts until the internal temperature reaches 165°F (74°C).

Remove the chicken from the grill and let it rest for 5 minutes before serving. Garnish with parsley and lemon wedges if desired.

Notes

For extra juicy chicken, use boneless chicken thighs instead of breasts. Fresh herbs will provide the most vibrant flavor, but dried herbs can be used if necessary. Always allow the grilled chicken to rest before slicing to retain moisture. This chicken also works well in salads, wraps, and rice bowls for meal prep.
