Ingredients

1.5 pounds ground chicken (preferably dark meat for extra juiciness)

½ cup crumbled feta cheese

¼ cup panko breadcrumbs

2 tablespoons fresh parsley, chopped

2 teaspoons dried oregano

1 teaspoon lemon zest

4 burger buns, lightly toasted

Instructions

In a large mixing bowl, combine the ground chicken, grated onion, minced garlic, crumbled feta, panko breadcrumbs, parsley, oregano, salt, pepper, and lemon zest. Mix gently until ingredients are evenly distributed.

Divide the mixture into 4 equal portions and shape each into a thick burger patty. Press the center slightly to prevent puffing during cooking.

Heat a skillet or grill pan over medium heat and add olive oil. Cook the patties 5–6 minutes per side, or until the internal temperature reaches 165°F (74°C) and the exterior is golden brown.

While the patties cook, slice tomatoes, cucumbers, and red onions. Prepare lettuce or arugula if desired.

Lightly toast the burger buns on a skillet or in the oven.

Assemble the burgers: spread tzatziki on the bottom bun, place the cooked patty on top, add vegetables and greens, then finish with tzatziki and the top bun. Serve immediately.
