4 boneless, skinless chicken breasts
2 tablespoons olive oil
1 medium onion, finely chopped
3 garlic cloves, minced
1 cup chicken broth
1 cup heavy cream
3 tablespoons Dijon mustard
1 tablespoon whole-grain mustard
1 teaspoon dried thyme or 1 tablespoon fresh thyme leaves
Salt and black pepper to taste
Optional: chopped parsley for garnish


Instructions

  • Season both sides of the chicken with salt and black pepper.

  • Heat olive oil in a large skillet over medium-high heat. Sear the chicken for 4 to 5 minutes per side until golden, then remove and set aside.

  • In the same skillet, reduce heat to medium and sauté the chopped onion until softened. Add the garlic and cook briefly until fragrant.

  • Pour in the chicken broth and scrape the pan to release any browned bits for added flavor.

  • Stir in the Dijon mustard and whole-grain mustard until fully blended.

  • Add the heavy cream and thyme, stirring well. Season again lightly with salt and pepper if needed.

  • Return the chicken to the skillet, nestling each piece into the sauce.

  • Cover and let simmer for 10 to 15 minutes until the chicken is fully cooked and the sauce thickens slightly.

  • Garnish with fresh parsley before serving.

Notes

For an even creamier texture, allow the sauce to simmer uncovered for a few extra minutes. Chicken thighs may be used instead of breasts for extra juiciness. Serve with potatoes, vegetables, rice, or pasta to enjoy every bit of the flavorful mustard sauce.
