Ingredients

  • 700 g flank steak or sirloin steak

  • 60 ml fresh lime juice

  • 3 tablespoons olive oil

  • 3 cloves garlic, minced

  • 1 teaspoon ground cumin

  • 1 teaspoon paprika

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • ¼ teaspoon chili powder (optional)

  • ½ cup chopped fresh cilantro

  • 2 cups long-grain rice

  • 4 cups water or low-sodium broth

  • 1 tablespoon olive oil

  • ½ teaspoon salt

  • 2 tablespoons fresh lime juice

  • ¼ cup chopped fresh cilantro

  • 1 cup cherry tomatoes, halved

  • 1 cup corn kernels

  • 1 cup black beans, rinsed and drained

  • 1 medium red onion, thinly sliced

  • 1 avocado, sliced


Instructions

  • In a bowl, mix lime juice, olive oil, garlic, cumin, paprika, salt, pepper, chili powder, and cilantro. Add steak and marinate for at least 30 minutes.

  • Cook rice with water or broth, olive oil, and salt. Fluff and stir in lime juice and cilantro.

  • Grill or pan-cook steak over medium-high heat for 4 to 5 minutes per side. Rest and slice thinly.

  • Assemble bowls with rice, steak, and toppings. Serve with lime wedges.
