  • 1 teaspoon smoked paprika

  • ½ teaspoon dried thyme (optional)

  • ½ teaspoon dried oregano

  • 1 teaspoon lemon zest (optional)

  • Fresh parsley for garnish


Instructions

  • Preheat the oven to 400°F and line a baking sheet with parchment paper or lightly grease a baking dish.

  • Pat the chicken thighs dry with paper towels to remove excess moisture.

  • In a small bowl, mix olive oil, garlic powder, onion powder, smoked paprika, black pepper, salt, thyme, oregano, and lemon zest.

  • Rub the seasoning mixture evenly over both sides of the chicken thighs.

  • Arrange the chicken thighs on the prepared baking sheet, leaving space between each piece for even cooking.

  • Bake in the preheated oven for 25–30 minutes, or until the internal temperature reaches 165°F and the chicken is cooked through.

  • Optional: Broil for 2–3 minutes for a slightly crispier exterior, watching closely to avoid burning.

  • Remove from the oven and let the chicken rest for 5 minutes before serving. Garnish with fresh parsley.

For extra flavor, marinate the chicken in the seasoning mixture for 30 minutes to 2 hours before baking. This chicken stores well in the fridge for 3–4 days and can be gently reheated.
