Ingredients

4 salmon fillets, skinless, 6 ounces (170 g) each

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried thyme

1 teaspoon dried oregano

½ teaspoon salt

½ teaspoon ground black pepper

¼ teaspoon cayenne pepper

2 tablespoons olive oil

3 cloves garlic, minced

4 cups fresh spinach, chopped (about 120 g)

4 ounces (115 g) cream cheese, softened

½ cup grated parmesan cheese (about 50 g)

2 tablespoons milk or light cream

¼ teaspoon salt

¼ teaspoon ground black pepper
Instructions

In a small bowl, mix paprika, garlic powder, onion powder, thyme, oregano, salt, black pepper, and cayenne pepper.

Heat olive oil in a skillet over medium heat. Sauté garlic for 30 seconds, then add spinach and cook until wilted.

Lower heat and stir in cream cheese, milk, salt, and black pepper until smooth. Remove from heat and mix in parmesan cheese.

Pat salmon dry, brush with olive oil, and coat evenly with the spice mixture.

Cut a pocket into each salmon fillet and fill with the creamy spinach mixture.

Heat a skillet over medium-high heat with olive oil. Cook salmon for 4 to 5 minutes per side until blackened and cooked through.
