Description
A comforting Moroccan-inspired fish dish simmered in a rich, spicy tomato sauce infused with warm spices and fresh herbs.
Ingredients

900 g white fish fillets

3 tbsp olive oil

4 cloves garlic, minced

1 tsp ground cumin

1 tsp sweet paprika

½ tsp chili flakes

1 tsp salt

½ tsp black pepper

Juice of 1 lemon (2 tbsp)

2 tbsp chopped fresh cilantro

1 tbsp chopped fresh parsley

3 tbsp olive oil
-
1 medium onion, finely chopped (150 g)

3 cloves garlic, minced

1 tsp ground cumin
-
1 tsp sweet paprika
-
½ tsp smoked paprika
-
½ tsp ground coriander
-
¼ tsp cayenne pepper

400 g crushed tomatoes
-
120 ml water
-
1 tbsp tomato paste
-
1 tbsp fresh lemon juice
Instructions

Mix marinade ingredients and coat fish. Rest 20–30 minutes.

Cook onion in olive oil until soft.

Add garlic and spices; stir until fragrant.

Add tomatoes, water, tomato paste, salt, and pepper. Simmer 10–15 minutes.

Add fish, cover, and simmer 10–12 minutes.

Finish with lemon juice and cilantro.
Notes
Adjust spice levels to taste. Serve with bread, rice, or couscous for a complete meal.
