Ingredients

900 g (2 lb) boneless, skinless chicken breast, cut into 4 cm (1½-inch) cubes

2 cups (320 g) fresh pineapple chunks

1 large red bell pepper, cut into squares

1 medium red onion, cut into wedges

80 ml (⅓ cup) olive oil

60 ml (¼ cup) soy sauce or coconut aminos

3 tablespoons honey

2 tablespoons fresh lime juice

3 cloves garlic, minced

1 teaspoon ground ginger

1 teaspoon paprika

½ teaspoon black pepper

½ teaspoon salt
Instructions

Whisk together olive oil, soy sauce, honey, lime juice, garlic, ginger, paprika, black pepper, and salt.

Marinate chicken in the mixture for at least 30 minutes.

Thread chicken, pineapple, bell pepper, and onion onto skewers.

Grill over medium-high heat for 10–12 minutes, turning occasionally, until chicken is cooked through.

Notes
