Ingredients

  • 900 g (2 lb) boneless, skinless chicken breast, cut into 4 cm (1½-inch) cubes

  • 2 cups (320 g) fresh pineapple chunks

  • 1 large red bell pepper, cut into squares

  • 1 medium red onion, cut into wedges

  • 80 ml (⅓ cup) olive oil

  • 60 ml (¼ cup) soy sauce or coconut aminos

  • 3 tablespoons honey

  • 2 tablespoons fresh lime juice

  • 3 cloves garlic, minced

  • 1 teaspoon ground ginger

  • 1 teaspoon paprika

  • ½ teaspoon black pepper

  • ½ teaspoon salt


Instructions

  • Whisk together olive oil, soy sauce, honey, lime juice, garlic, ginger, paprika, black pepper, and salt.

  • Marinate chicken in the mixture for at least 30 minutes.

  • Thread chicken, pineapple, bell pepper, and onion onto skewers.

  • Grill over medium-high heat for 10–12 minutes, turning occasionally, until chicken is cooked through.

  • Rest briefly before serving.

Notes

Soak wooden skewers in water for 20 minutes before grilling to prevent burning. Adjust sweetness or seasoning in the marinade to suit your taste preferences.
