Description

A flavorful and comforting chicken dish stuffed with creamy mozzarella, juicy tomatoes, and fragrant basil pesto, perfect for an easy yet impressive meal.


Ingredients

  • 4 boneless, skinless chicken breasts (170200 g / 67 oz each)

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • 1 teaspoon garlic powder

  • 1 teaspoon dried Italian seasoning

  • 120 g / 1 cup fresh mozzarella cheese, sliced or shredded

  • 2 medium tomatoes, thinly sliced (about 250 g / 9 oz)

  • 4 tablespoons basil pesto

  • 2 tablespoons olive oil


Instructions

  • Preheat oven to 190°C / 375°F.

  • Cut a pocket into each chicken breast and season inside and out.

  • Fill each pocket with pesto, mozzarella, and tomato slices.

  • Heat olive oil in an oven-safe skillet and sear chicken for 2–3 minutes per side.

  • Transfer skillet to oven and bake for 18–22 minutes, until fully cooked.

  • Rest for 5 minutes before serving.

Notes

  • Secure the chicken with toothpicks if needed to keep the filling inside.

  • Let the chicken rest before serving for the juiciest results.

  • Serve with vegetables, salad, or rice for a complete meal.
