Description

A quick and satisfying Mediterranean-inspired dish that combines fresh spinach, tangy feta, creamy mozzarella, and sweet red onion in crisp, golden tortillas.


Ingredients

  • 4 large flour tortillas (10 inches / 25 cm)

  • 2 cups fresh spinach leaves, chopped (60 g)

  • 1 cup feta cheese, crumbled (150 g)

  • 1 ½ cups mozzarella cheese, shredded (170 g)

  • ½ medium red onion, thinly sliced (75 g)

  • 2 tablespoons olive oil (30 ml)

  • ½ teaspoon dried oregano (1 g)

  • ¼ teaspoon black pepper (0.5 g)

  • ¼ teaspoon salt, or to taste (1 g)


Instructions

  • Heat 1 tablespoon of olive oil in a skillet over medium heat and sauté the red onion for 3–4 minutes until softened.

  • Add spinach and cook until wilted, about 1–2 minutes. Remove from heat and drain excess moisture.

  • Combine spinach, onion, feta, mozzarella, oregano, pepper, and salt in a bowl.

  • Heat a skillet and lightly oil it. Place one tortilla in the pan and spread filling on half.

  • Fold the tortilla and cook until golden, 2–3 minutes per side.

  • Repeat with remaining tortillas. Slice and serve warm.

Notes

  • Drain spinach well to keep quesadillas crisp.

  • Serve immediately for best texture and flavor.

  • These quesadillas pair well with fresh salads or yogurt-based sauces.
