Description

A sweet and savory roasted vegetable side dish featuring tender carrots and caramelized brussel sprouts coated in pure maple syrup and herbs.


Ingredients

1 lb (450 g) brussel sprouts, trimmed and halved
1 lb (450 g) carrots, peeled and sliced into ½-inch (1.25 cm) pieces
3 tablespoons pure maple syrup (45 ml)
2 tablespoons olive oil (30 ml)
3 cloves garlic, minced
½ teaspoon salt (3 g)
¼ teaspoon black pepper (1 g)
½ teaspoon dried thyme (1 g)
½ teaspoon smoked paprika (1 g)
1 tablespoon fresh lemon juice (15 ml)
2 tablespoons chopped fresh parsley (8 g)


Instructions

Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.

In a large bowl, whisk together maple syrup, olive oil, garlic, salt, pepper, thyme, and smoked paprika.

Add brussel sprouts and carrots; toss to coat evenly.

Spread vegetables in a single layer on the baking sheet.

Roast for 25–30 minutes, stirring halfway through, until tender and caramelized.

Remove from oven, drizzle with lemon juice, and garnish with chopped parsley before serving.

Notes

For extra crunch, add ¼ cup (30 g) chopped pecans during the last 5 minutes of roasting. Ensure vegetables are evenly spaced on the baking sheet for optimal caramelization.
