Ingredients

8 large eggs

½ cup (120 g) full-fat mayonnaise

1 tablespoon (15 g) Dijon mustard

1 teaspoon (5 ml) apple cider vinegar

½ cup (about 50 g) celery, finely chopped

2 tablespoons (about 20 g) red onion, finely minced

½ teaspoon (1 g) paprika

½ teaspoon (3 g) salt

¼ teaspoon (0.5 g) black pepper

2 tablespoons (about 6 g) fresh chives, chopped
Instructions

Hard-boil the eggs, cool completely, peel, and chop.

In a large bowl, whisk together mayonnaise, mustard, vinegar, paprika, salt, and pepper.

Add chopped eggs, celery, red onion, and chives.
