Ingredients
1 cup jasmine rice
2 cups water
1/2 teaspoon salt
1 pound large shrimp, peeled and deveined
2 tablespoons olive oil
3 tablespoons honey
2 tablespoons fresh lime juice
1 teaspoon lime zest
2 cloves garlic, minced
1/2 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1 large avocado, sliced
1 cup cherry tomatoes, halved
1/2 cup cucumber, diced
1/4 cup red onion, thinly sliced
2 tablespoons fresh cilantro, chopped
1 lime, cut into wedges
Instructions
Rinse the jasmine rice under cold water until the water runs clear.
In a saucepan combine rice, water, and 1/2 teaspoon salt. Bring to a boil, then reduce heat to low, cover, and cook for 15 minutes. Let sit 5 minutes and fluff with a fork.
In a bowl whisk together honey, lime juice, lime zest, garlic, paprika, salt, and black pepper.
Heat olive oil in a skillet over medium-high heat.
Add shrimp and cook for 1–2 minutes per side until pink.
Pour the honey lime sauce into the skillet and toss the shrimp to coat. Cook another 1–2 minutes until slightly thickened.
Divide rice into bowls.
Top with shrimp, avocado slices, cherry tomatoes, cucumber, red onion, and cilantro.
Serve with lime wedges and drizzle with extra lime juice if desired.
Notes
Use fresh lime juice for the brightest flavor.
Do not overcook shrimp to keep them tender.
You can substitute brown rice or quinoa for a different texture and nutritional profile.
Add corn, shredded lettuce, or roasted vegetables to customize the bowl.
