A comforting slow cooker noodle dish inspired by classic lo mein, made easy for busy evenings with tender chicken and savory sauce.
Ingredients

1½ pounds boneless, skinless chicken breasts, cut into bite-sized pieces

12 ounces lo mein noodles

1 cup low-sodium soy sauce

1 cup chicken broth

¼ cup oyster-style sauce

3 tablespoons brown sugar

2 tablespoons sesame oil

4 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 cup shredded carrots

1 red bell pepper, thinly sliced

1 cup snap peas

1 tablespoon cornstarch mixed with 2 tablespoons water
Instructions

Place chicken in the crockpot.

Whisk together soy sauce, broth, oyster-style sauce, brown sugar, sesame oil, garlic, and ginger.

Pour sauce over chicken and cook on low for 4–5 hours or high for 2–3 hours.

Add vegetables and cornstarch slurry during the last 30 minutes.

Cook noodles separately, then add to crockpot and toss to coat before serving.
Notes
For best texture, always add noodles near the end. Adjust vegetables based on preference and seasonality.
