Description

A comforting slow cooker noodle dish inspired by classic lo mein, made easy for busy evenings with tender chicken and savory sauce.


Ingredients

Scale
  • pounds boneless, skinless chicken breasts, cut into bite-sized pieces

  • 12 ounces lo mein noodles

  • 1 cup low-sodium soy sauce

  • 1 cup chicken broth

  • ¼ cup oyster-style sauce

  • 3 tablespoons brown sugar

  • 2 tablespoons sesame oil

  • 4 cloves garlic, minced

  • 1 tablespoon fresh ginger, grated

  • 1 cup shredded carrots

  • 1 red bell pepper, thinly sliced

  • 1 cup snap peas

  • 1 tablespoon cornstarch mixed with 2 tablespoons water


Instructions

  • Place chicken in the crockpot.

  • Whisk together soy sauce, broth, oyster-style sauce, brown sugar, sesame oil, garlic, and ginger.

  • Pour sauce over chicken and cook on low for 4–5 hours or high for 2–3 hours.

  • Add vegetables and cornstarch slurry during the last 30 minutes.

  • Cook noodles separately, then add to crockpot and toss to coat before serving.

Notes

For best texture, always add noodles near the end. Adjust vegetables based on preference and seasonality.
