Ingredients

Chicken breast – 500 g (1.1 lb), sliced

Zucchini – 3 medium (450 g / 1 lb), sliced

Red bell pepper – 1 large (150 g / 5 oz), sliced

Garlic cloves – 3 cloves (9 g), minced

Fresh ginger – 1 tablespoon (15 g), grated

Soy sauce – 3 tablespoons (45 ml)

Oyster-style mushroom sauce (non-alcoholic) – 1 tablespoon (15 ml)

Sesame oil – 1 teaspoon (5 ml)

Vegetable oil – 2 tablespoons (30 ml)

Cornstarch – 1 teaspoon (5 g)

Water – 60 ml (1/4 cup)

Black pepper – 1/2 teaspoon (2 g)
Instructions

Toss chicken with 1 tablespoon soy sauce and cornstarch.

Heat vegetable oil in a skillet over medium-high heat.

Cook chicken until golden and cooked through; remove and set aside.

Sauté garlic and ginger for 30 seconds.

Add zucchini and bell pepper; stir fry for 3–4 minutes.

Return chicken to skillet and add remaining ingredients.

Cook until sauce thickens slightly and serve hot.
