  • 4 boneless, skinless chicken breasts

  • 3 tablespoons honey

  • 2 tablespoons olive oil

  • 1 teaspoon Dijon mustard

  • 1 teaspoon garlic powder

  • ½ teaspoon smoked paprika

  • Salt and black pepper to taste

  • 2 medium sweet potatoes, peeled and cubed

  • 2 medium apples, cored and sliced (Granny Smith or Honeycrisp)

  • 1 tablespoon olive oil

  • 1 teaspoon ground cinnamon

  • Salt and black pepper to taste

  • Optional garnish: fresh thyme or rosemary, chopped parsley


Instructions

  • Preheat your oven to 400°F (200°C).

  • In a large bowl, toss sweet potatoes and apple slices with olive oil, cinnamon, salt, and pepper. Spread them evenly on a baking sheet lined with parchment paper.

  • In a small bowl, whisk together honey, olive oil, Dijon mustard, garlic powder, smoked paprika, salt, and pepper to make the glaze.

  • Pat the chicken breasts dry and brush generously with the honey glaze on all sides.

  • Place the glazed chicken on the same baking sheet as the sweet potatoes and apples, leaving space around each piece for even cooking.

  • Roast in the oven for 25–30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and vegetables are tender. Halfway through, drizzle extra honey over the chicken and toss the sweet potatoes and apples.

  • Optional: Switch the oven to broil for 2–3 minutes to deepen the color, watching closely to prevent burning.

  • Remove the sheet from the oven and let the chicken rest for 5 minutes before slicing.

  • Arrange the chicken, sweet potatoes, and apples on a serving platter. Garnish with fresh thyme or rosemary and parsley. Serve immediately.

  • For extra flavor, marinate the chicken in the honey glaze for 30–60 minutes before roasting.
