Description

A flavorful and comforting meal featuring tender chicken glazed in a sweet and smoky honey BBQ sauce, served with roasted vegetables and fluffy rice—perfect for a special family dinner.


Ingredients

4 boneless, skinless chicken breasts (700800 g)
1 cup (240 ml) barbecue sauce
1/4 cup (60 ml) honey
2 tablespoons olive oil (30 ml)
2 cloves garlic, minced
1 teaspoon smoked paprika (5 g)
1/2 teaspoon salt (2 g)
1/2 teaspoon black pepper (2 g)

2 cups broccoli florets (300 g)
2 carrots, sliced (150 g)
1 red bell pepper, chopped (120 g)
1 zucchini, sliced (150 g)
2 tablespoons olive oil (30 ml)
1/2 teaspoon salt (2 g)
1/2 teaspoon black pepper (2 g)
1/2 teaspoon dried oregano (2 g)

1 cup long-grain rice (200 g)
2 cups water (480 ml)
1 tablespoon olive oil (15 ml)
1/2 teaspoon salt (2 g)


Instructions

Rinse rice and cook with water, olive oil, and salt until tender.

Mix barbecue sauce, honey, olive oil, garlic, paprika, salt, and pepper.

Coat chicken with sauce and place in a baking dish.

Toss vegetables with oil and seasonings, then spread on a baking sheet.

Bake chicken and vegetables at 200°C (400°F) for 20–25 minutes.

Brush extra sauce on chicken during the last 5 minutes.

Serve chicken over rice with roasted vegetables.

Notes

You can substitute chicken thighs for a juicier option.
Adjust the sweetness by reducing or increasing honey.
Store leftovers in the refrigerator for up to 3 days.
Reheat gently to maintain moisture and flavor.
