Description

A cozy, flavorful snack that combines soft, fluffy bread with a creamy, slightly spicy chicken filling. For the Dough:

  • 3 cups all-purpose flour

  • 2 ¼ teaspoons instant yeast (1 packet)

  • 2 tablespoons granulated sugar

  • 1 teaspoon salt

  • 1 cup warm milk

  • ¼ cup melted butter or neutral oil

  • 1 large egg

For the Cheesy Dynamite Chicken Filling:

  • 2 cups cooked, shredded chicken breast

  • 1 small onion, finely chopped

  • 1 tablespoon minced garlic

  • 1 tablespoon oil or butter

  • ½ cup mayonnaise

  • ½ cup cream cheese or thick cream

  • 1 cup shredded mozzarella cheese

  • 12 tablespoons chili sauce or sriracha (adjust to taste)

  • ½ teaspoon paprika

  • ½ teaspoon black pepper

  • ¼ teaspoon salt

  • 1 tablespoon chopped green onions (optional)

For Assembly:

  • 1 beaten egg for egg wash

  • Extra shredded cheese for topping (optional)


Instructions

  • In a large bowl, combine warm milk, sugar, and yeast. Let sit for 5 minutes until foamy.

  • Add melted butter, egg, and salt. Mix well.

  • Gradually add flour, kneading until a soft, smooth dough forms. Knead 7–10 minutes by hand or 5 minutes in a stand mixer.

  • Shape dough into a ball, place in a greased bowl, cover, and let rise for 1 hour until doubled in size.

  • Heat oil or butter in a skillet over medium heat. Cook onion until soft, then add garlic and cook 1 minute.

  • Add shredded chicken, remove from heat, then stir in mayonnaise, cream cheese, mozzarella, chili sauce, paprika, pepper, and green onions. Adjust seasoning.

  • Punch down risen dough and divide into 12–14 equal pieces. Flatten each piece into a circle.

  • Place a spoonful of filling in the center, then pinch edges together to seal. Place seam-side down on a parchment-lined baking sheet.

  • Brush tops with beaten egg and sprinkle extra cheese if desired.

  • Bake at 350°F (175°C) for 18–22 minutes until golden brown. Let cool slightly before serving.

Notes

  • Do not overfill the buns to avoid leakage.

  • Seal dough tightly for a neat shape.

  • Adjust chili sauce to preferred spice level.

  • Let buns cool for 5 minutes to allow the filling to set.

  • Room-temperature ingredients make kneading and rising easier.
