1 teaspoon salt
-
1 cup warm milk
-
¼ cup melted butter or neutral oil
-
1 large egg
For the Cheesy Dynamite Chicken Filling:

2 cups cooked, shredded chicken breast
-
1 small onion, finely chopped
-
1 tablespoon minced garlic
-
1 tablespoon oil or butter
-
½ cup mayonnaise
-
½ cup cream cheese or thick cream
-
1 cup shredded mozzarella cheese
-
1–2 tablespoons chili sauce or sriracha (adjust to taste)
-
½ teaspoon paprika
-
½ teaspoon black pepper
-
¼ teaspoon salt
-
1 tablespoon chopped green onions (optional)
For Assembly:
-
1 beaten egg for egg wash
-
Extra shredded cheese for topping (optional)
Instructions
-
In a large bowl, combine warm milk, sugar, and yeast. Let sit for 5 minutes until foamy.
-
Add melted butter, egg, and salt. Mix well.
-
Gradually add flour, kneading until a soft, smooth dough forms. Knead 7–10 minutes by hand or 5 minutes in a stand mixer.
-
Shape dough into a ball, place in a greased bowl, cover, and let rise for 1 hour until doubled in size.
-
Heat oil or butter in a skillet over medium heat. Cook onion until soft, then add garlic and cook 1 minute.
-
Add shredded chicken, remove from heat, then stir in mayonnaise, cream cheese, mozzarella, chili sauce, paprika, pepper, and green onions. Adjust seasoning.
-
Punch down risen dough and divide into 12–14 equal pieces. Flatten each piece into a circle.
-
Place a spoonful of filling in the center, then pinch edges together to seal. Place seam-side down on a parchment-lined baking sheet.
-
Brush tops with beaten egg and sprinkle extra cheese if desired.
-
Bake at 350°F (175°C) for 18–22 minutes until golden brown. Let cool slightly before serving.
Notes
-
Do not overfill the buns to avoid leakage.
-
Seal dough tightly for a neat shape.
-
Adjust chili sauce to preferred spice level.
-
Let buns cool for 5 minutes to allow the filling to set.
-
Room-temperature ingredients make kneading and rising easier.
-
Buns can be stored in the refrigerator for 3 days or frozen for up to 1 month.
