A refreshing and creamy chicken salad inspired by classic tzatziki flavors, perfect for light meals, meal prep, or sharing with family and friends.
Ingredients

1 ½ pounds (680 g) boneless, skinless chicken breasts

1 tablespoon olive oil

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon dried oregano

2 cups (480 g) plain Greek-style yogurt

1 large cucumber (about 300 g), finely grated and squeezed dry

3 cloves garlic, minced

2 tablespoons fresh lemon juice

2 tablespoons olive oil

1 teaspoon salt

1 tablespoon chopped fresh dill

1 tablespoon chopped fresh parsley

½ cup (75 g) diced red onion

1 cup (150 g) cherry tomatoes, halved

½ cup (75 g) diced cucumber

¼ cup (40 g) sliced green onions
Instructions

Season the chicken with olive oil, salt, pepper, garlic powder, and oregano.

Cook the chicken in a grill pan or skillet over medium heat for 6 to 7 minutes per side until fully cooked. Rest, then dice.

In a bowl, mix yogurt, grated cucumber, garlic, lemon juice, olive oil, salt, dill, and parsley until smooth.

Add diced chicken to the dressing and fold gently.

Stir in red onion, cherry tomatoes, diced cucumber, and green onions.

Chill for 30 minutes before serving for best flavor.
Notes
For best results, squeeze as much liquid as possible from the cucumber. This salad can be stored in an airtight container in the refrigerator for up to three days. Adjust garlic and herbs to taste for a milder or bolder flavor.
