Description

A refreshing and light salad made with crisp cucumbers, sweet carrots, and a bright lemon dressing, perfect for everyday meals or warm-weather dining.


Ingredients

  • 2 medium cucumbers (300 g / 10.5 oz), thinly sliced

  • 2 large carrots (200 g / 7 oz), grated

  • 2 tablespoons fresh parsley, chopped

  • 1 tablespoon fresh dill, chopped

  • 2 tablespoons fresh lemon juice (30 ml)

  • 1 tablespoon extra virgin olive oil (15 ml)

  • 1 teaspoon honey or maple syrup (5 ml)

  • ½ teaspoon salt

  • ¼ teaspoon ground black pepper


Instructions

  • Place sliced cucumbers and grated carrots in a large bowl.

  • Add parsley and dill, then toss gently.

  • Whisk lemon juice, olive oil, honey, salt, and pepper in a small bowl.

  • Pour dressing over the salad and toss until evenly coated.

  • Let rest for 5–10 minutes before serving.

Notes

  • For best texture, dress the salad shortly before serving.

  • Adjust lemon juice and seasoning to taste.
