A refreshing and light salad made with crisp cucumbers, sweet carrots, and a bright lemon dressing, perfect for everyday meals or warm-weather dining.
Ingredients

2 medium cucumbers (300 g / 10.5 oz), thinly sliced

2 large carrots (200 g / 7 oz), grated

2 tablespoons fresh parsley, chopped

1 tablespoon fresh dill, chopped

2 tablespoons fresh lemon juice (30 ml)

1 tablespoon extra virgin olive oil (15 ml)

1 teaspoon honey or maple syrup (5 ml)

½ teaspoon salt

¼ teaspoon ground black pepper
Instructions

Place sliced cucumbers and grated carrots in a large bowl.

Add parsley and dill, then toss gently.

Whisk lemon juice, olive oil, honey, salt, and pepper in a small bowl.

Pour dressing over the salad and toss until evenly coated.
