Description

A refreshing and creamy chicken salad packed with sweet pineapple, crunchy vegetables, and a tropical twist perfect for light meals or gatherings.


Ingredients

2 cups (300 g) cooked chicken breast, diced or shredded

1 cup (165 g) pineapple chunks

1/2 cup (75 g) celery, chopped

1/3 cup (50 g) red bell pepper, diced

1/4 cup (40 g) red onion, chopped

1/3 cup (80 g) mayonnaise

2 tablespoons (30 ml) yogurt

1 tablespoon (15 ml) lemon juice

1 teaspoon (5 g) honey

1/2 teaspoon (2.5 g) salt

1/4 teaspoon (1 g) black pepper

1/4 cup (35 g) chopped almonds or cashews

2 tablespoons (8 g) fresh herbs


Instructions

Cook and cool the chicken, then dice or shred it.

Chop pineapple, celery, bell pepper, and onion.

In a bowl, whisk together mayonnaise, yogurt, lemon juice, honey, salt, and pepper.

Combine chicken and chopped ingredients in a large bowl.

Add dressing and mix until evenly coated.

Fold in nuts and herbs.

Chill for 20–30 minutes before serving.

Notes

Use fresh pineapple for best flavor

Chill before serving for enhanced taste

Add nuts just before serving for extra crunch

Store in the refrigerator for up to 3 days
