  • 1 tablespoon freshly squeezed lemon juice

  • Salt, to taste

  • Freshly ground black pepper, to taste

  • Optional garnish: extra lemon zest, chopped parsley, or additional toasted almonds


Instructions

  • Wash and trim the green beans, removing any tough ends. Bring a large pot of salted water to a boil.

  • Add the green beans and blanch for 3–4 minutes until bright green and tender-crisp.

  • Immediately transfer the beans into a bowl of ice water to stop the cooking process. Let them sit for 1–2 minutes, then drain and pat dry.

  • In a large skillet over medium heat, toast the sliced almonds for 3–4 minutes until golden and fragrant. Stir frequently to prevent burning, then remove and set aside.

  • In the same skillet, melt the butter over medium heat. Add the minced garlic and cook for about 30 seconds until fragrant but not browned.

  • Add the green beans to the skillet and toss to coat in the garlic butter. Cook for 2–3 minutes to reheat the beans.

  • Add the toasted almonds, lemon zest, and lemon juice. Toss well to combine.

  • Season with salt and freshly ground black pepper to taste.

  • Transfer to a serving dish and garnish with extra almonds, lemon zest, or parsley if desired. Serve immediately.

Notes

For the best flavor, use fresh green beans and avoid overcooking them. The quick blanching and ice bath method ensures they stay crisp and vibrantly green. Always toast the almonds just before serving so they remain crunchy. You can prepare the beans a day ahead and sauté them right before serving for convenience.
