Description

A flavorful Mediterranean dish featuring tender chicken marinated in lemon juice, olive oil, and aromatic herbs, then roasted to golden perfection.


Ingredients

1.5 kg (3.3 lbs) chicken thighs or drumsticks

80 ml (1/3 cup) fresh lemon juice

60 ml (1/4 cup) olive oil

5 garlic cloves, minced

1 tablespoon dried oregano

1 teaspoon dried thyme

1 teaspoon paprika

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon Dijon mustard

1 lemon, sliced (optional)

1 onion, sliced (optional)

2 potatoes, cut into wedges (optional)

2 tablespoons fresh parsley, chopped


Instructions

In a bowl, whisk together lemon juice, olive oil, garlic, oregano, thyme, paprika, mustard, salt, and pepper.

Add chicken and coat well. Marinate for at least 1 hour or overnight.

Preheat oven to 200°C (400°F).

Arrange chicken in a baking dish with optional vegetables and pour marinade over.

Bake for 45–55 minutes until golden and fully cooked.

Garnish with parsley and serve with lemon wedges.
