Description

These delicious potato puffs are crisp on the outside and soft, cheesy, and fluffy on the inside—perfect as a snack, side dish, or party appetizer.


Ingredients

Scale
    • 2 cups mashed potatoes

    • 2 large eggs

    • 1 cup shredded cheddar cheese

    • 1/4 cup grated Parmesan cheese

    • 1/4 cup milk

    • 2 tablespoons chopped chives or green onions

    • 1/2 teaspoon garlic powder

    • 1/2 teaspoon salt

    • 1/4 teaspoon black pepper

    • Nonstick spray or melted butter for greasing


Instructions

  • Preheat oven to 400°F (200°C). Grease a mini muffin pan.

  • Whisk eggs and milk together in a bowl.

  • Add mashed potatoes, cheddar, and Parmesan; mix well.

  • Stir in chives, garlic powder, salt, and pepper.

  • Spoon mixture into muffin cups, filling to the top.

  • Bake for 20–25 minutes or until golden and puffed.

  • Cool slightly and serve warm.

Notes
