These delicious potato puffs are crisp on the outside and soft, cheesy, and fluffy on the inside—perfect as a snack, side dish, or party appetizer.
Ingredients

2 cups mashed potatoes

2 large eggs

1 cup shredded cheddar cheese

1/4 cup grated Parmesan cheese

1/4 cup milk

2 tablespoons chopped chives or green onions

1/2 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

Nonstick spray or melted butter for greasing

Instructions

Preheat oven to 400°F (200°C). Grease a mini muffin pan.

Whisk eggs and milk together in a bowl.

Add mashed potatoes, cheddar, and Parmesan; mix well.

Stir in chives, garlic powder, salt, and pepper.

Spoon mixture into muffin cups, filling to the top.

Bake for 20–25 minutes or until golden and puffed.
