Ingredients

1 ½ pounds sirloin or ribeye steak, cut into 1-inch cubes

3 tablespoons unsalted butter

4 cloves garlic, minced

½ teaspoon black pepper

½ teaspoon smoked paprika

½ teaspoon onion powder

½ teaspoon Italian seasoning

1 tablespoon chopped fresh parsley (optional, for garnish)

1 ½ cups baby potatoes, halved

1 cup baby carrots, sliced

1 red bell pepper, chopped

1 yellow bell pepper, chopped

1 cup broccoli florets

1 tablespoon olive oil (for vegetables)

½ teaspoon salt (for vegetables)

¼ teaspoon black pepper (for vegetables)

½ teaspoon garlic powder

½ teaspoon dried thyme
Instructions

Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.

In a large bowl, mix baby potatoes, carrots, bell peppers, and broccoli with olive oil, salt, pepper, garlic powder, and thyme. Toss until evenly coated.

Spread vegetables in a single layer on the baking sheet. Roast for 20–25 minutes, stirring halfway, until tender and golden around the edges.

While the vegetables roast, pat the steak cubes dry with paper towels. Season with salt, pepper, smoked paprika, onion powder, and Italian seasoning.

Heat olive oil in a large skillet over medium-high heat. Add the steak bites in a single layer and sear for 2–3 minutes per side, until browned and cooked to your liking. Remove from skillet and set aside.

Lower heat to medium, then add butter to the same skillet. Once melted, stir in minced garlic and cook for 30–60 seconds, until fragrant.

Return the steak bites to the skillet and toss them in the garlic butter sauce until well-coated.

Remove roasted vegetables from the oven and transfer them to a serving platter. Top with garlic butter steak bites and garnish with fresh parsley. Serve warm.
