Description

  • 1 ½ pounds sirloin or ribeye steak, cut into 1-inch cubes

  • 1 ½ tablespoons olive oil

  • 3 tablespoons unsalted butter

  • 4 cloves garlic, minced

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • ½ teaspoon smoked paprika

  • ½ teaspoon onion powder

  • ½ teaspoon Italian seasoning

  • 1 tablespoon chopped fresh parsley (optional, for garnish)

  • 1 ½ cups baby potatoes, halved

  • 1 cup baby carrots, sliced

  • 1 red bell pepper, chopped

  • 1 yellow bell pepper, chopped

  • 1 cup broccoli florets

  • 1 tablespoon olive oil (for vegetables)

  • ½ teaspoon salt (for vegetables)

  • ¼ teaspoon black pepper (for vegetables)

  • ½ teaspoon garlic powder

  • ½ teaspoon dried thyme


Instructions

  • Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.

  • In a large bowl, mix baby potatoes, carrots, bell peppers, and broccoli with olive oil, salt, pepper, garlic powder, and thyme. Toss until evenly coated.

  • Spread vegetables in a single layer on the baking sheet. Roast for 20–25 minutes, stirring halfway, until tender and golden around the edges.

  • While the vegetables roast, pat the steak cubes dry with paper towels. Season with salt, pepper, smoked paprika, onion powder, and Italian seasoning.

  • Heat olive oil in a large skillet over medium-high heat. Add the steak bites in a single layer and sear for 2–3 minutes per side, until browned and cooked to your liking. Remove from skillet and set aside.

  • Lower heat to medium, then add butter to the same skillet. Once melted, stir in minced garlic and cook for 30–60 seconds, until fragrant.

  • Return the steak bites to the skillet and toss them in the garlic butter sauce until well-coated.

  • Remove roasted vegetables from the oven and transfer them to a serving platter. Top with garlic butter steak bites and garnish with fresh parsley. Serve warm.

Notes

  • Sirloin or ribeye are ideal cuts for tender and flavorful steak bites.

  • Substitute other vegetables such as zucchini, mushrooms, or asparagus if desired.

  • For a lighter version, replace butter with olive oil.

  • Avoid overcrowding the pan when searing the steak to ensure proper browning.
