Ingredients
-
1 pound (450 g) fresh mushrooms (button, cremini, or a mix), cleaned and trimmed
-
3 tablespoons unsalted butter, melted
-
4 cloves garlic, minced
-
1 tablespoon olive oil
-
1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)
-
½ teaspoon salt
-
¼ teaspoon black pepper
-
1 tablespoon freshly chopped parsley, for garnish
-
Optional: a pinch of red pepper flakes for heat
Instructions
-
Preheat the oven to 400°F (200°C) to ensure even roasting and caramelization.
-
Wipe mushrooms clean with a damp paper towel and trim stems if necessary. Slice larger mushrooms in half or quarters; leave smaller mushrooms whole.
-
In a small bowl, combine melted butter, minced garlic, olive oil, thyme, salt, and black pepper. Stir until well blended.
-
Place mushrooms in a large bowl or on a rimmed baking sheet. Pour the garlic butter mixture over them and toss gently to coat evenly.
-
Spread mushrooms in a single layer on the baking sheet, avoiding overcrowding. Roast for 20–25 minutes, stirring halfway through, until golden brown and tender.
-
Remove from the oven and transfer to a serving dish. Sprinkle with chopped parsley and optional red pepper flakes. Toss gently to distribute evenly.
-
Serve hot as a side dish or topping for bread, baked potatoes, pasta, or grain bowls. Store leftovers in an airtight container in the refrigerator for up to three days.
