Ingredients

Feta cheese, crumbled – 8 ounces (225 g)

Greek yogurt or cream cheese – 4 ounces (½ cup / 120 g)

Extra virgin olive oil – 3 tablespoons (45 ml), plus more for drizzling

Pomegranate arils – ½ cup (85 g)

Shelled pistachios, chopped – ⅓ cup (40 g)

Fresh parsley or mint, chopped – 2 tablespoons

Fresh lemon juice – 1 tablespoon (15 ml)

Black pepper – ¼ teaspoon

Optional honey – 1 teaspoon (5 ml)
Instructions

Blend feta, yogurt or cream cheese, lemon juice, black pepper, and 2 tablespoons olive oil until smooth.

Adjust texture with remaining olive oil and add honey if desired.

Toast pistachios in a dry skillet until fragrant and cool.

Spread feta mixture onto a serving dish.

Top with pomegranate arils, pistachios, and herbs.
