Description

This Easy Turkey Sausage and Egg Strata layers tender bread cubes, lean turkey sausage, fluffy eggs, and melted cheese for a comforting meal that’s both hearty and easy to prepare. You can assemble it ahead of time and bake it fresh in the morning, making it ideal for brunch or meal prep.

  • 1 pound turkey breakfast sausage

  • 1 medium yellow onion, diced

  • 1 red bell pepper, diced

  • 8 large eggs

  • 2 cups milk (whole or 2%)

  • 1 cup shredded cheddar cheese

  • 1 cup shredded mozzarella cheese

  • 1 teaspoon garlic powder

  • 1 teaspoon dried parsley

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • 6 cups day-old bread, cut into cubes (French or Italian bread works best)

  • 2 tablespoons olive oil or butter (for greasing the dish)

Optional toppings: chopped green onions, parsley, or extra cheese


Instructions

  • Preheat oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish with olive oil or butter.

  • In a large skillet over medium heat, cook the turkey sausage until browned and fully cooked, breaking it apart as it cooks. Transfer to a plate and set aside.

  • In the same skillet, add the diced onion and red bell pepper. Sauté for about 4–5 minutes, until softened. Remove from heat.

  • In a large mixing bowl, whisk together the eggs, milk, garlic powder, parsley, salt, and pepper until well combined.

  • Spread half of the bread cubes in the prepared baking dish. Layer with half of the sausage, vegetables, and both cheeses. Repeat the layers with remaining ingredients.

  • Slowly pour the egg mixture evenly over the layers. Press the bread gently to ensure it absorbs the liquid.

  • For best texture, cover and refrigerate for at least 30 minutes or overnight to let the bread soak.

  • Bake uncovered for 45–50 minutes, or until the top is golden brown and the center is set.

  • Let cool for 10 minutes before slicing. Garnish with fresh parsley or green onions if desired. Serve warm.

Notes

  • Use day-old or slightly stale bread to prevent a soggy texture.

  • You can substitute the cheese with Swiss, Monterey Jack, or pepper jack for a flavor twist.
