Description

A comforting, one-dish meal inspired by classic tamale flavors, perfect for quick and satisfying dinners.


Ingredients

  • 1 tablespoon olive oil

  • 1 medium yellow onion, finely chopped (about 1 cup)

  • 2 cloves garlic, minced

  • 1 pound ground beef

  • 1 tablespoon chili powder

  • 1 teaspoon ground cumin

  • 1/2 teaspoon smoked paprika

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1 can (15 ounces) diced tomatoes, undrained

  • 1 can (15 ounces) black beans, drained and rinsed

  • 1 cup frozen corn kernels

  • 1 cup shredded cheddar cheese

Cornbread Topping

  • 1 cup yellow cornmeal

  • 1 cup all-purpose flour

  • 1 tablespoon baking powder

  • 1/2 teaspoon salt

  • 1 cup milk

  • 1 large egg

  • 1/4 cup melted unsalted butter


Instructions

  • Preheat oven to 375°F (190°C).

  • Heat olive oil in a skillet over medium heat. Cook onion until soft, then add garlic.

  • Add ground beef and cook until browned. Stir in spices.

  • Add diced tomatoes, black beans, and corn. Simmer for 5 minutes.

  • Transfer mixture to a greased 9×13-inch baking dish and sprinkle with cheese.

  • In a bowl, mix cornbread topping ingredients until just combined.

  • Spread topping over the beef mixture.

  • Bake for 30–35 minutes until golden and set. Rest 10 minutes before serving.

Notes

  • Ground chicken can be used instead of beef.

  • Let the casserole rest before serving for cleaner slices.

  • Leftovers reheat well and can be frozen for later use.
