1 medium yellow onion, finely chopped (about 1 cup)

1 pound ground beef

1 tablespoon chili powder

1/4 teaspoon black pepper

1 can (15 ounces) diced tomatoes, undrained

1 can (15 ounces) black beans, drained and rinsed

1 cup frozen corn kernels

1 cup shredded cheddar cheese
Cornbread Topping

1 cup yellow cornmeal
-
1 cup all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1 cup milk

1 large egg
-
1/4 cup melted unsalted butter
Instructions

Preheat oven to 375°F (190°C).

Heat olive oil in a skillet over medium heat. Cook onion until soft, then add garlic.

Add ground beef and cook until browned. Stir in spices.

Add diced tomatoes, black beans, and corn. Simmer for 5 minutes.

Transfer mixture to a greased 9×13-inch baking dish and sprinkle with cheese.

In a bowl, mix cornbread topping ingredients until just combined.

Spread topping over the beef mixture.

Bake for 30–35 minutes until golden and set. Rest 10 minutes before serving.
