  • 6 boneless, skinless chicken thighs

  • 2 tablespoons olive oil

  • Salt and black pepper, to taste

  • 3 cloves garlic, minced

  • 1/4 cup sweet chili sauce

  • 2 tablespoons soy sauce (low-sodium if preferred)

  • 1 tablespoon honey

  • 1 teaspoon rice vinegar or apple cider vinegar

  • 1/2 teaspoon crushed red pepper flakes (optional)

  • 2 green onions, sliced for garnish

  • Sesame seeds, for garnish


Instructions

  • Pat the chicken thighs dry and season both sides with salt and black pepper.

  • Heat the olive oil in a large skillet over medium-high heat. Add the chicken thighs and cook 4-5 minutes per side until golden brown.

  • Reduce heat to medium and push chicken to one side. Add minced garlic to the empty side and sauté 30 seconds to 1 minute until fragrant.

  • In a small bowl, whisk together sweet chili sauce, soy sauce, honey, vinegar, and crushed red pepper flakes. Pour over the chicken, coating evenly.

  • Simmer for 5-7 minutes, spooning sauce over the chicken occasionally, until the sauce thickens and the chicken reaches 165°F (74°C).

  • Remove from heat and garnish with sliced green onions and sesame seeds. Serve hot with rice, noodles, or a fresh salad.
