Ingredients
-
6 boneless, skinless chicken thighs
-
2 tablespoons olive oil
-
Salt and black pepper, to taste
-
3 cloves garlic, minced
-
1/4 cup sweet chili sauce
-
2 tablespoons soy sauce (low-sodium if preferred)
-
1 tablespoon honey
-
1 teaspoon rice vinegar or apple cider vinegar
-
1/2 teaspoon crushed red pepper flakes (optional)
-
2 green onions, sliced for garnish

Sesame seeds, for garnish
Instructions
-
Pat the chicken thighs dry and season both sides with salt and black pepper.
-
Heat the olive oil in a large skillet over medium-high heat. Add the chicken thighs and cook 4-5 minutes per side until golden brown.
-
Reduce heat to medium and push chicken to one side. Add minced garlic to the empty side and sauté 30 seconds to 1 minute until fragrant.
-
In a small bowl, whisk together sweet chili sauce, soy sauce, honey, vinegar, and crushed red pepper flakes. Pour over the chicken, coating evenly.
-
Simmer for 5-7 minutes, spooning sauce over the chicken occasionally, until the sauce thickens and the chicken reaches 165°F (74°C).
-
Remove from heat and garnish with sliced green onions and sesame seeds. Serve hot with rice, noodles, or a fresh salad.
Notes
-
Use room temperature chicken for even cooking.
