Ingredients

1 lb (450 g) fresh salmon fillet, skin removed

1 cup (60 g) breadcrumbs

1 large egg

2 tablespoons fresh parsley, finely chopped

2 cloves garlic, minced

1 teaspoon lemon zest

2 tablespoons lemon juice

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon paprika

2 tablespoons olive oil
For the Avocado Sauce

2 ripe avocados

¼ cup (60 g) plain Greek yogurt

1 tablespoon lemon juice

1 small garlic clove
-
¼ teaspoon salt
-
2–3 tablespoons water
Instructions

Finely chop the salmon and place it in a large bowl.

Add breadcrumbs, egg, parsley, garlic, lemon zest, lemon juice, salt, pepper, and paprika. Mix gently until combined.

Shape the mixture into 1½-inch balls.

Heat olive oil in a skillet over medium heat and cook the salmon balls, turning gently, until golden and cooked through.

Blend all avocado sauce ingredients until smooth, adding water as needed.

Serve salmon balls warm with avocado sauce.
Notes
For best results, use fresh salmon and ripe avocados. The salmon balls can be made ahead and reheated gently before serving.
