Description

This Easy Prime Rib Caesar Pasta Salad is a perfect way to turn leftover prime rib into a refreshing and hearty meal. Combining tender pasta, crisp romaine, juicy cherry tomatoes, and creamy Caesar dressing, this dish is both satisfying and flavorful.   • 12 oz rotini or penne pasta

  • 2 cups cooked prime rib, thinly sliced or chopped

  • 4 cups romaine lettuce, chopped

  • 1 cup cherry tomatoes, halved

  • ½ cup red onion, thinly sliced

  • 1 cup Caesar dressing (store-bought or homemade)

  • ½ cup grated Parmesan cheese

  • ¼ cup croutons, lightly crushed

  • 2 tablespoons olive oil

  • 1 tablespoon lemon juice

  • 1 teaspoon garlic powder

  • ½ teaspoon black pepper

  • Salt, to taste

  • Fresh parsley, chopped (optional, for garnish)


Instructions

  • Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions until al dente. Drain and rinse under cold water, then set aside in a large mixing bowl.

  • Allow the prime rib to come to room temperature for 10–15 minutes, then thinly slice or chop into bite-sized pieces.

  • In the mixing bowl with pasta, add chopped romaine, cherry tomatoes, and red onion. Gently toss to combine.

  • In a small bowl, mix Caesar dressing, olive oil, lemon juice, garlic powder, black pepper, and a pinch of salt.

  • Pour the dressing over the pasta and vegetables. Add the prime rib and gently fold everything together until evenly coated.

  • Sprinkle grated Parmesan cheese and lightly crushed croutons over the top. Garnish with fresh parsley if desired.

  • Serve immediately at room temperature or chill in the refrigerator for 30–60 minutes for a refreshing option.

  • Optional: Drizzle a little extra olive oil or lemon juice over each serving for added flavor.
