A rich, comforting one-pot pasta made with chicken sausage, Cajun spices, and a creamy sauce, perfect for quick and satisfying weeknight dinners.


Ingredients

  • 340 g (12 oz) chicken or turkey sausage, sliced

  • 2 tablespoons olive oil

  • 1 small onion, finely chopped

  • 3 cloves garlic, minced

  • 2 teaspoons Cajun seasoning (adjust to taste)

  • 240 g (8 oz) uncooked pasta (penne or rotini)

  • 480 ml (2 cups) chicken broth

  • 240 ml (1 cup) heavy cream

  • 50 g (1/2 cup) grated Parmesan cheese

  • Salt and black pepper, to taste

  • Fresh parsley, chopped (optional garnish)


Instructions

  • Heat olive oil in a large pot or deep skillet over medium heat. Add the sliced sausage and cook until lightly browned.

  • Add the chopped onion and cook for 3–4 minutes until softened. Stir in the garlic and cook for 30 seconds until fragrant.

  • Sprinkle in the Cajun seasoning and stir well to coat the sausage and aromatics.

  • Add the uncooked pasta and pour in the chicken broth. Stir to combine.

  • Bring to a gentle simmer, cover, and cook for 10–12 minutes, stirring occasionally, until the pasta is tender.

  • Reduce the heat and stir in the heavy cream and Parmesan cheese. Cook for 2–3 minutes until the sauce thickens.

  • Season with salt and black pepper to taste. Garnish with parsley if desired and serve warm.

  • Add vegetables like bell peppers or spinach for extra nutrition.

  • For leftovers, reheat gently with a splash of broth or milk to loosen the sauce.
