Ingredients

  • 1.5 lbs boneless skinless chicken breasts or chicken thighs

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp paprika

  • 1 tsp Italian seasoning

  • 2 tbsp olive oil

  • 2 tbsp unsalted butter (for searing)

  • 3 tbsp unsalted butter (for sauce)

  • 4 garlic cloves, minced

  • 1 tbsp lemon zest

  • 1/4 cup fresh lemon juice

  • 1/2 cup low-sodium chicken broth

  • 1 tsp dried parsley or 1 tbsp fresh chopped parsley

  • 12 oz fresh green beans, trimmed

  • Pinch salt and pepper to season vegetables


Instructions

  • Pat the chicken dry and season both sides with salt, pepper, garlic powder, onion powder, paprika, and Italian seasoning.

  • Heat olive oil and 2 tbsp butter in a large skillet over medium-high heat. Sear chicken for 4–6 minutes per side until golden (it will finish cooking later). Remove and set aside.

  • Reduce heat to medium. Add 3 tbsp butter to the skillet. Stir in the minced garlic and cook for 30 seconds until fragrant.

  • Add lemon zest, lemon juice, and chicken broth. Stir, scraping the browned bits from the bottom of the pan.

  • Add the green beans and season with a pinch of salt and pepper. Cover and cook for 5–6 minutes until crisp-tender.

  • Return the chicken to the skillet, nestling it between the green beans. Spoon sauce over the top.

  • Cover and cook for 6–8 more minutes or until the chicken reaches an internal temperature of 165°F.

  • Garnish with parsley and adjust seasoning if needed before serving.

Notes

You may substitute chicken thighs for a juicier result or use frozen green beans if fresh are unavailable—add them directly to the skillet without thawing. For meal prep, this dish reheats very well and maintains its flavor for up to four days in the refrigerator. Adjust lemon to taste for extra brightness.
