Ingredients

  • 1 lb chicken sausage or turkey sausage, sliced

  • 2 medium sweet potatoes (about lbs), diced

  • 1 tablespoon olive oil

  • 1 medium yellow onion, sliced

  • 1 red bell pepper, sliced

  • 3 cloves garlic, minced

  • ¼ cup honey

  • 2 tablespoons low-sodium soy sauce

  • 1 teaspoon smoked paprika

  • ½ teaspoon salt

  • ½ teaspoon ground black pepper

  • ½ teaspoon dried thyme

  • 2 tablespoons water or broth


Instructions

  • Heat olive oil in a large skillet over medium heat.

  • Add sweet potatoes and cook for 10–12 minutes, stirring occasionally.

  • Add sausage and cook until lightly browned.

  • Stir in onion and bell pepper and cook until softened.

  • Add garlic, spices, salt, and pepper; cook briefly.

  • Whisk honey, soy sauce, and water, then pour into the skillet.

  • Simmer until everything is coated and the sauce thickens.
