  • 1 teaspoon smoked paprika

  • 1 teaspoon ground cumin

  • 1 teaspoon chili powder

  • 1 teaspoon salt, or to taste

  • ½ teaspoon black pepper

  • ½ teaspoon crushed red pepper flakes (optional)

  • 1 ½ cups shredded cheddar or Monterey Jack cheese (optional for topping)

  • ¼ cup chopped fresh parsley or green onions for garnish


Instructions

  • Preheat oven to 375°F (190°C). Lightly grease a large casserole dish or baking pan.

  • Heat olive oil in a skillet over medium heat. Add onion, bell pepper, and celery. Cook 5–7 minutes until softened. Stir in garlic and cook another minute.

  • Add smoked paprika, cumin, chili powder, salt, black pepper, and red pepper flakes. Stir well to combine.

  • Stir in black-eyed peas, diced tomatoes, corn, and cooked rice. Mix thoroughly and taste for seasoning.

  • Pour mixture into the prepared casserole dish. Sprinkle cheese evenly on top if using.

  • Bake uncovered for 25–30 minutes, or until hot and bubbly.
