4 boneless, skinless chicken breasts

1 lemon, thinly sliced

1 cup cherry tomatoes

1 red bell pepper, sliced

1 yellow bell pepper, sliced

½ red onion, thinly sliced

½ cup Kalamata olives, pitted

¼ cup crumbled feta cheese

2 tablespoons fresh parsley, chopped

Instructions

Preheat oven to 400°F (200°C) and line a sheet pan with parchment paper or lightly grease it.

In a small bowl, mix salt, black pepper, garlic powder, paprika, and oregano. Rub over chicken breasts and drizzle with 1 tablespoon olive oil.

In another bowl, combine cherry tomatoes, bell peppers, red onion, and olives. Drizzle with remaining olive oil and season with salt, pepper, and optional thyme or rosemary. Toss to coat.

Place chicken in the center of the sheet pan and surround with vegetables. Arrange lemon slices on top of chicken and scatter over vegetables.

Bake for 25–30 minutes, or until chicken reaches an internal temperature of 165°F (74°C) and vegetables are tender.

Remove from oven, sprinkle feta cheese and parsley over chicken and vegetables.
