Ingredients

1 ½ pounds boneless, skinless chicken thighs or chicken breasts

2 tablespoons olive oil

3 large yellow onions, thinly sliced

2 cloves garlic, minced

1 teaspoon dried thyme

½ teaspoon salt

½ teaspoon black pepper

1 cup long-grain white rice, uncooked

2 ½ cups low-sodium beef broth

½ cup shredded mozzarella cheese

½ cup shredded Swiss cheese

2 tablespoons unsalted butter, cut into small pieces

1 tablespoon fresh parsley, finely chopped (optional)
Instructions

Preheat oven to 375°F (190°C) and grease a large baking dish.

Sauté onions in 1 tablespoon olive oil until soft and golden. Add garlic, thyme, salt, and pepper.

Spread uncooked rice in the baking dish and top with onion mixture.

Pour beef broth evenly over the rice.

Season chicken and arrange on top. Drizzle with remaining olive oil and dot with butter.

Cover with foil and bake for 40 minutes.

Remove foil, sprinkle with cheeses, and bake uncovered for 15 to 20 minutes.
