Ingredients

  • 1 ½ pounds boneless, skinless chicken thighs or chicken breasts

  • 2 tablespoons olive oil

  • 3 large yellow onions, thinly sliced

  • 2 cloves garlic, minced

  • 1 teaspoon dried thyme

  • ½ teaspoon salt

  • ½ teaspoon black pepper

  • 1 cup long-grain white rice, uncooked

  • 2 ½ cups low-sodium beef broth

  • ½ cup shredded mozzarella cheese

  • ½ cup shredded Swiss cheese

  • 2 tablespoons unsalted butter, cut into small pieces

  • 1 tablespoon fresh parsley, finely chopped (optional)


Instructions

  • Preheat oven to 375°F (190°C) and grease a large baking dish.

  • Sauté onions in 1 tablespoon olive oil until soft and golden. Add garlic, thyme, salt, and pepper.

  • Spread uncooked rice in the baking dish and top with onion mixture.

  • Pour beef broth evenly over the rice.

  • Season chicken and arrange on top. Drizzle with remaining olive oil and dot with butter.

  • Cover with foil and bake for 40 minutes.

  • Remove foil, sprinkle with cheeses, and bake uncovered for 15 to 20 minutes.

  • Rest briefly before serving and garnish with parsley if desired.

Notes

For extra depth of flavor, allow the onions to caramelize a bit longer before assembling the dish. This recipe reheats well and is ideal for meal prep or leftovers.
