Description
A simple slow cooker meal inspired by classic teriyaki flavors, made easy with pantry staples and minimal prep.
Ingredients

2 pounds (900 g) boneless, skinless chicken breasts or thighs

¾ cup (180 ml) low-sodium soy sauce

½ cup (120 ml) water

⅓ cup (65 g) packed brown sugar

2 tablespoons honey
-
2 tablespoons rice vinegar

3 cloves garlic, minced
-
1 tablespoon fresh ginger, grated

1 teaspoon sesame oil

2 tablespoons cornstarch

2 tablespoons cold water
Instructions

Add chicken to the slow cooker.

Whisk soy sauce, water, brown sugar, honey, rice vinegar, garlic, ginger, and sesame oil.

Pour sauce over chicken.

Cook on LOW for 4–5 hours or HIGH for 2½–3 hours.

Remove chicken and shred or slice.

Mix cornstarch with cold water and stir into sauce.

Cook on HIGH for 10–15 minutes until thickened.

Return chicken to sauce and stir to coat.
Notes
Use low-sodium soy sauce for best balance. Sauce thickens more as it cools. Adjust sweetness to taste with additional honey if desired.
