Description

A simple slow cooker meal inspired by classic teriyaki flavors, made easy with pantry staples and minimal prep.


Ingredients

Scale
  • 2 pounds (900 g) boneless, skinless chicken breasts or thighs

  • ¾ cup (180 ml) low-sodium soy sauce

  • ½ cup (120 ml) water

  • ⅓ cup (65 g) packed brown sugar

  • 2 tablespoons honey

  • 2 tablespoons rice vinegar

  • 3 cloves garlic, minced

  • 1 tablespoon fresh ginger, grated

  • 1 teaspoon sesame oil

  • 2 tablespoons cornstarch

  • 2 tablespoons cold water


Instructions

  • Add chicken to the slow cooker.

  • Whisk soy sauce, water, brown sugar, honey, rice vinegar, garlic, ginger, and sesame oil.

  • Pour sauce over chicken.

  • Cook on LOW for 4–5 hours or HIGH for 2½–3 hours.

  • Remove chicken and shred or slice.

  • Mix cornstarch with cold water and stir into sauce.

  • Cook on HIGH for 10–15 minutes until thickened.

  • Return chicken to sauce and stir to coat.

Notes

Use low-sodium soy sauce for best balance. Sauce thickens more as it cools. Adjust sweetness to taste with additional honey if desired.
