Description

A comforting slow-cooker chicken dish with lemon, capers, and a silky sauce, perfect for hectic weekdays.


Ingredients

  • 900 g (2 lb) boneless, skinless chicken breasts

  • 60 g (1/2 cup) all-purpose flour

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 2 tablespoons olive oil

  • 240 ml (1 cup) chicken broth

  • 80 ml (1/3 cup) lemon juice

  • Zest of 1 lemon

  • 3 cloves garlic, minced

  • 60 g (1/4 cup) capers, drained

  • 1 teaspoon dried oregano

  • 1 teaspoon dried thyme

  • 30 g (2 tablespoons) unsalted butter

  • 2 tablespoons cornstarch

  • 2 tablespoons water

  • Fresh parsley, chopped


Instructions

  • Coat chicken breasts in flour mixed with salt and pepper.

  • Lightly brown chicken in olive oil for 2–3 minutes per side.

  • Place chicken in crockpot and add broth, lemon juice, zest, garlic, capers, oregano, and thyme.

  • Cook on low for 4–5 hours or high for 2–3 hours.

  • Remove chicken. Stir cornstarch mixed with water and butter into the sauce.

  • Cook on high for 10–15 minutes until thickened, then return chicken to the sauce and serve.

Notes

For a thicker sauce, leave the crockpot lid off during the final 15 minutes. Serve over pasta, rice, or mashed potatoes for a complete meal.
