A comforting slow-cooker chicken dish with lemon, capers, and a silky sauce, perfect for hectic weekdays.
Ingredients

900 g (2 lb) boneless, skinless chicken breasts

60 g (1/2 cup) all-purpose flour

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons olive oil

240 ml (1 cup) chicken broth

80 ml (1/3 cup) lemon juice

Zest of 1 lemon

3 cloves garlic, minced

60 g (1/4 cup) capers, drained

1 teaspoon dried oregano

1 teaspoon dried thyme

30 g (2 tablespoons) unsalted butter

2 tablespoons cornstarch

2 tablespoons water

Fresh parsley, chopped
Instructions

Coat chicken breasts in flour mixed with salt and pepper.

Lightly brown chicken in olive oil for 2–3 minutes per side.

Place chicken in crockpot and add broth, lemon juice, zest, garlic, capers, oregano, and thyme.

Cook on low for 4–5 hours or high for 2–3 hours.

Remove chicken. Stir cornstarch mixed with water and butter into the sauce.

Cook on high for 10–15 minutes until thickened, then return chicken to the sauce and serve.
Notes
For a thicker sauce, leave the crockpot lid off during the final 15 minutes. Serve over pasta, rice, or mashed potatoes for a complete meal.
