Ingredients

2 tablespoons olive oil

1 medium onion, finely diced

3 cloves garlic, minced

450 g (1 lb) ground beef or ground chicken

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon smoked paprika

1 teaspoon ground cumin

1/2 teaspoon chili powder

1 red bell pepper, diced

1 cup (150 g) frozen corn kernels

1 can (400 g / 14 oz) diced tomatoes

1 can (400 g / 14 oz) white beans, drained and rinsed

3 cups (720 ml) chicken broth

1 cup (240 ml) heavy cream

1/2 cup (120 ml) milk

1 cup (100 g) shredded cheddar cheese

2 tablespoons all-purpose flour

2 tablespoons chopped parsley or green onions
Instructions

Heat olive oil in a large pot over medium heat and cook onion until soft.

Add garlic and cook briefly until fragrant.

Add ground meat and cook until browned.

Stir in salt, pepper, paprika, cumin, and chili powder.

Add bell pepper, corn, tomatoes, and beans.

Sprinkle in flour and stir for 1 minute.

Slowly add chicken broth while stirring.

Simmer for 15 minutes over low heat.

Stir in heavy cream and milk, simmer 5 minutes.

Add cheese and stir until melted.
