Description

A hearty, comforting soup with a creamy base and bold flavors, perfect for cozy evenings and family dinners.


Ingredients

  • 2 tablespoons olive oil

  • 1 medium onion, finely diced

  • 3 cloves garlic, minced

  • 450 g (1 lb) ground beef or ground chicken

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1 teaspoon smoked paprika

  • 1 teaspoon ground cumin

  • 1/2 teaspoon chili powder

  • 1 red bell pepper, diced

  • 1 cup (150 g) frozen corn kernels

  • 1 can (400 g / 14 oz) diced tomatoes

  • 1 can (400 g / 14 oz) white beans, drained and rinsed

  • 3 cups (720 ml) chicken broth

  • 1 cup (240 ml) heavy cream

  • 1/2 cup (120 ml) milk

  • 1 cup (100 g) shredded cheddar cheese

  • 2 tablespoons all-purpose flour

  • 2 tablespoons chopped parsley or green onions


Instructions

  • Heat olive oil in a large pot over medium heat and cook onion until soft.

  • Add garlic and cook briefly until fragrant.

  • Add ground meat and cook until browned.

  • Stir in salt, pepper, paprika, cumin, and chili powder.

  • Add bell pepper, corn, tomatoes, and beans.

  • Sprinkle in flour and stir for 1 minute.

  • Slowly add chicken broth while stirring.

  • Simmer for 15 minutes over low heat.

  • Stir in heavy cream and milk, simmer 5 minutes.

  • Add cheese and stir until melted.

  • Garnish and serve warm.

Notes

  • Adjust spices to taste.

  • Add extra broth or milk when reheating if the soup thickens.

  • This soup stores well and is ideal for meal prep.
