Instructions

  • Heat the olive oil in a large skillet or Dutch oven over medium heat. Add the sliced sausage and cook for 3–4 minutes until lightly browned. Remove the sausage and set aside, leaving a bit of rendered fat in the pan.

  • Add the onion and bell peppers to the pan. Sauté for 5–6 minutes until the vegetables are softened. Stir in the minced garlic and cook for 30 seconds until fragrant, taking care not to burn it.

  • Sprinkle in paprika, Cajun seasoning, black pepper, salt, and crushed red pepper flakes. Stir thoroughly to coat the vegetables evenly and toast the spices for maximum aroma.

  • Pour in the chicken broth, scraping the bottom of the pan to lift any browned bits. Bring the mixture to a gentle simmer, letting the flavors meld together for a few minutes.
