1 cup shredded mozzarella cheese

4 large flour tortillas

¼ cup mayonnaise or Greek yogurt (optional)

Instructions

In a medium bowl, combine chicken with olive oil, garlic, paprika, onion powder, salt, and pepper until evenly coated.

Heat a large skillet over medium-high heat and cook the chicken 5–7 minutes, stirring occasionally, until cooked through and lightly golden. Remove and set aside.

Lightly warm the flour tortillas in a skillet or microwave for 20–30 seconds.

Lay a tortilla flat, spread mayonnaise or Greek yogurt if using, and layer spinach, bell pepper, cucumber, carrot, cooked chicken, and shredded cheeses.
