Description

A fun, colorful, balanced bento lunch featuring mini chicken rice balls, fresh fruits, veggies, and a creamy yogurt dip.


Ingredients

Scale
  • 1 cup cooked white rice

  • 1/2 cup cooked shredded chicken breast

  • 1 tablespoon finely diced carrots

  • 1 tablespoon finely diced cucumber

  • 1 teaspoon soy sauce

  • 1 teaspoon sesame seeds (optional)

  • Pinch of salt

  • 1/2 cup sliced cucumbers

  • 1/2 cup sliced strawberries

  • 1/4 cup blueberries

  • 1/2 cup baby carrots

  • 1/2 cup plain yogurt

  • 1 teaspoon honey

  • 1/4 teaspoon vanilla


Instructions

  • Combine cooked rice, chicken, carrots, cucumber, soy sauce, sesame seeds, and salt.

  • Shape 2-tablespoon portions into small rice balls. Chill for 10 minutes.

  • Prepare all fruits and vegetables.

  • Mix yogurt, honey, and vanilla for the dip.

  • Assemble the bento with rice balls, fruits, vegetables, and dip.

Notes

Chill the rice balls to help them keep their shape. Swap proteins or fruits as desired for variety.
